Using ID Letters instead of #'s in FB

I've noticed that some players use letters instead of #'s during FB games. The only option i've see are to give your plane a #. Does anyone know the setup to allow letters in place of #'s

Yes,
If you choose to fly for Great Britain for example, you will have letters instead of numbers!
